Making dinner lately hasn’t been a huge priority. We have been eating a lot of Trader Joe’s, deli sandwiches and takeout. But the few times I am feeling inspired to really cook something, I still want it to be fast, easy, and seriously delish. Because let’s face it. Anything less just isn’t going to make the cut. When I busted out this Instant Pot Chipotle Chicken last week, I immediately put it on my list for those days when you don’t want to work hard, but want good, homemade food.
The best part about this chipotle chicken is that it is so versatile. Mexican is something we have at least once a week, since there are so many variations. Rice bowls. Taco salad. Tacos. Burritos. Nachos. Enchiladas. The list seems to go on and on. And this chicken is going to be what takes any of those standard weeknight meals to the next level.
The chicken is smoky from the chipotles and fresh with lime zest, but you can keep the heat to a minimum or dial the chile up depending on your family’s preference. I like to keep things a little less spicy, so I can convince my toddler to actually eat it. I can fully promise that this chicken is best topped with my homemade salsa and just a dollop of sour cream! I can almost guarantee you have nearly everything you need for this right in your pantry and fridge, so get cooking!
Instant Pot Chipotle Chicken
Serves 4-6
Ingredients
- 1 tbs olive oil
- Green pepper, sliced
- White onion, sliced
- 2 cloves garlic, minced
- 1 tbs tomato paste
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 pounds boneless skinless chicken thighs, cut into 2″ pieces and seasoned with salt and pepper
- 1/2 cup chicken stock
- Two chipotle peppers in adobo sauce (you want to get some of the yummy sauce from the can in with them!)
- Zest and juice from 1 lime
Set your Instant Pot to Sauté mode. Pour in olive oil. Once hot, add in peppers and onions and sauté until soft. Add garlic. Sauté until fragrant. Stir in tomato paste, cumin, oregano, salt and pepper and let those cook together for about a minute.
Add in chicken, stock, and chipotle peppers. Give it a good stir.
Place the lid on with the vent closed. Cook on “poultry” setting or high pressure for seven minutes. Let pressure naturally release. It is so important that you don’t use manual release with meat. Keeps the chicken nice and juicy!
Once the pressure has released, remove the chicken and veggies to a large mixing bowl. Leave the liquid in the pot and set to sauté again. Reduce the liquid by half while you shred the chicken. Recombine the chicken and sauce. Squeeze lime over and sprinkle zest over the top of chicken.
Now, get ready to make the best tacos you’ve had at home!
Note: Breasts work well for this recipe, too! If you don’t have an Instant Pot, you could easily make this in a slow cooker. Just do step one and two on the stove top and cook on low heat for 4-5 hours.
