I am finally adding in this recipe to the blog. It is a long time coming! I have been eating these pancakes and waffles since I was a little girl. Every Sunday, my mom or dad would whip up a huge batch for our family of seven, and now I do the same for my oldest.
The recipe is super easy, doubles or even triples like a dream, and has minimal ingredients. No need for fancy buttermilk. No melting of butter. Just basic essentials you will most likely have on hand, even when you pantry or fridge is looking its saddest.
This is one recipe for both pancakes and waffles. It is easily interchangeable but adjusting the milk. For pancakes, you want your batter to be a bit thinner, while waffles are best with a thicker consistency.
HOMEMADE PANCAKES AND WAFFLES
INGREDIENTS (makes four servings)
- 1 egg
- 1 1/4 cup milk (1 1/2 for pancakes!)
- 1/4 cup vegetable or other mild oil (avocado works, too)
- 1/2 tsp salt
- 2 Tbs granulated sugar
- 1 1/4 cup flour
- 2 tsp baking powder
Whisk the first five ingredients together until well combined. Add in flour and baking powder and whisk until clumps are gone. Viola! So easy.
Cook in your favorite waffle iron or on a griddle, top with butter and syrup or jam and whipped cream. Nutella and strawberries also makes this an easy and fun dessert to make on game night!
