When you think of fall baking, the first flavors that usually come to mind are apple and pumpkin. And I love me a good pumpkin treat or apple pie. But I am a chocolate girl at heart, and sometimes you just need to be able to dig into a rich, cozy, piece of chocolate cake. I partnered with Walmart today to share my version of a chocolate cake with a cozy, autumnal twist.
It is a mashup of a traditional spice cake and a decadent chocolate sour cream bundt. You get the best of both worlds. Satisfy your chocolate craving while getting your basic fall spice needs at the same time!
I went hunting for my bundt pan a few weeks ago, and it had somehow disappeared since it was last used. I logged into Walmart.com and headed straight for the home department. I have found so many amazing pieces for my kitchen from Walmart Home. They have plenty of quality items at amazing prices. I found this beautiful bundt pan and it was at my door in under three days! I love that they do quick and easy shipping or in store pickup for lots of items!
This cake is super simple to make, but has a few key ingredients you won’t want to skip. You can even make the entire thing in the pot! Sour cream is essential in keeping this cake moist and tender. Ginger gives it plenty of spice. And the spiced drizzle is the literal icing on this cake.
COZIEST CHOCOLATE BUNDT CAKE
Makes one bundt cake
Cake Ingredients
- 1 cup unsalted butter
- 1/3 cup cocoa powder
- 1 teaspoon salt
- 1 3/4 cups granulated sugar
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/4 tsp cloves
- 2-3 tsp ginger powder
- 2 large eggs
- 1 cup milk
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 cup sour cream
Icing Ingredients
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/4 tsp cinnamon
- a pinch of cloves
- pinch of ginger
Preheat your oven to 350 F. Butter and flour (or spray very well with cooking spray) a 10″ bundt pan. In a large pot over medium heat, melt butter. Whisk in cocoa powder, salt, vanilla, cinnamon, cloves, ginger. Next, whisk in granulated sugar.
One at a time, quickly beat the eggs into the butter and chocolate mixture. Pour in the milk and mix well.
In a large mixing bowl, combine cinnamon, cloves, ginger, flour, and baking soda. Gently stir the flour and baking soda into the melted butter and cocoa mixture until. just combined. Fold in the sour cream.
Pour into prepared bundt pan and bake 40-45 minutes, or until a toothpick comes out clean.
Cool for 10 minutes before flipping onto a cooling rack. Cool completely.
To prepare the icing, whisk ingredients together in a large mixing bowl. Add additional milk a teaspoon at a time if needed.
Drizzle over cooled cake. Serve and enjoy!
