It feels so good to finally start hosting again. Between pregnancy and a pandemic, it has been a hot minute since we had anyone over to our home. But this past weekend I hosted some of our friends for a fun brunch, and it made me so happy! Hosting is definitely something I have seriously missed.

I have always loved all things lemon, and I’ve had this idea in my head for a lemon icebox cake for months now. Brunch was the perfect time to whip up this easy, sweet treat. Icebox cake is one of the best desserts to make when you are hosting.
Icebox cake is best made the day before, but can easily be made two or even three days ahead. A combo of cookies, cream or pudding, and any other yummy toppings, the cookies get soft and cake-like as they sit in the fridge. This lemon version is light and fluffy, and perfect for summertime.

I found this gorgeous platter for only $17.99, and it is such beautiful quality. And I am in love with this jade cake stand! It makes such a statement on a table. You know I have a thing for tea towels, and these lemon tea towels are so bright and fun!
For this lemon icebox cake, you only need a few ingredients and 20 minutes to put it together. It was seriously so fast and easy! You could easily jazz it up, but I think that keeping it simple lets the lemon flavor shine.
EASY LEMON ICEBOX CAKE
Serves 8
Ingredients
2 Boxes of ‘Nilla Wafer cookies, or other thin, vanilla cookie
1 8 oz brick of cream cheese, softened
1 Box Instant Vanilla pudding
2 cups whole milk
1/2 – 1 cup lemon curd (any brand will do, or this recipe is super easy!), depending on how tart you want it
1 container Cool Whip
1 lemon, juiced and zested
Raspberries for decorating (optional)
Mix your vanilla pudding mix and two cups of milk. This will make a more concentrated pudding and a thicker consistency. Let set for five minutes. Beat cream cheese with a whisk or with an electric mixer. Add in the pudding, lemon curd, and lemon juice and beat together until smooth. Fold in Cool Whip and lemon zest.
On your cake stand or plate, smear a bit of the pudding mixture on to give the cookies something to stick to. Place cookies in a single until the desired width of cake is achieved. Spoon on the whipped pudding mixture and layer more cookies. Repeat until you have used all of the pudding and you have a cake!
Top with raspberries and additional lemon zest for decoration. Let sit in the fridge overnight and enjoy!
